While grapefruit contains healthy nutrients, it also has a naturally occurring chemical that interferes with your body's ability to break down cholesterol-lowering statin medications. If you are taking these medications, skip the grapefruit in this recipe.
Ingredients
- 4 cups baby spinach
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- 1/8 teaspoon salt
- Freshly ground black pepper
- 2 cups chopped cooked chicken
- 2 mandarin oranges, peeled and sectioned
- 1/8 peeled grapefruit, sectioned
- 1/4 cup sliced almonds
Preparation
- In a large mixing bowl, toss the spinach with olive oil, lemon juice, salt, and pepper.
- Add the chicken, oranges, grapefruit, and almonds to the bowl. Toss gently.
- Arrange on 4 plates and serve.
