Nutritious chicken citrus salad recipe

This salad is just right to boost your immune system. Citrus fruits add vitamin C and important fibers. Top it off with a light lemon dressing to make this refreshing dish.

  • Prep time: 45 minutes
While grapefruit contains healthy nutrients, it also has a naturally occurring chemical that interferes with your body's ability to break down cholesterol-lowering statin medications. If you are taking these medications, skip the grapefruit in this recipe.
Ingredients
  • 4 cups baby spinach
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1/8 teaspoon salt
  • Freshly ground black pepper
  • 2 cups chopped cooked chicken
  • 2 mandarin oranges, peeled and sectioned
  • 1/8 peeled grapefruit, sectioned 
  • 1/4 cup sliced almonds
Preparation
  1. In a large mixing bowl, toss the spinach with olive oil, lemon juice, salt, and pepper.
  2. Add the chicken, oranges, grapefruit, and almonds to the bowl. Toss gently.
  3. Arrange on 4 plates and serve.
